Fumarate hydratase

Fumarate hydratase (fumarase) is a tricarboxylic-acid-cycle enzyme catalysing the reversible hydration of fumarate to malate, central to mitochondrial oxidative energy production. Its salivary appearance reflects the mitochondrial and oxidative-metabolic activity associated with physical exertion. Lindsey et al. identified fumarate hydratase among the salivary proteins differentiating states of acute physical fatigue.
